Ghemme DOCG Chioso dei Pomi 2012 Rovellotti
Description
The "Chioso dei Pomi" Ghemme is a complex red, produced by the Rovellotti winery, in the northern area of Piedmont.
It consists of a blend of local grapes, divided into 85% Nebbiolo and 15% Vespolina. Following the manual harvest of the grapes in October, the must undergoes maceration in contact with the skins and alcoholic fermentation in steel tanks. This is followed by malolactic fermentation carried out partially in wood and aging in wood, 12 months in Slavonian oak barrels and 18 months in tonneaux.
Garnet red, at sight. The fruity note perceived by the nose recalls plum jam and citrus; followed by notes of dried violet, pepper, juniper berries and a slightly mentholated trail. In the mouth it is full-bodied, structured, punctuated by a popping freshness and a finely incisive tannin. It persists in the complexity of its character.
Excellent if paired with cream deer.
