Description
The Puro Bianco produced by the Movia winery is a sparkling wine from the Brda/Collio region in Slovenia, made from Ribolla and Chardonnay grapes grown on soils composed of layers of marl and sandstone. The Movia winery is one of the largest in the area and belongs to a niche of wineries from these borderlands, whose wines are absolutely worth discovering, with a limited and high-quality production.
The winemaking process involves a late harvest and a soft pressing, followed by the initiation of spontaneous fermentation in stainless steel tanks. Subsequently, the fermenting must is transferred to barrique, where the wine ages for four years. For the second fermentation, fermenting must containing yeasts and sugars is added, serving as liqueur de tirage. The wine remains in contact with the lees until serving time.
It presents a crystalline golden-yellow color, with numerous small and quite persistent bubbles. It is fresh and mineral, with a vigorous liveliness and a balance that combines elegance and complexity. On the palate, it offers explosive sensations and an extraordinary aromatic intensity, making it unique in its kind.
Perfect for pairing with seafood dishes, preferably raw, or fresh shellfish, enhancing the flavors thanks to its freshness and minerality.
