Description
What kind of wine is it
Ex Voto Blanc by E. Guigal is a still white wine made from Marsanne and Roussanne grapes. It comes from historic vines aged between fifty and ninety years and is characterized by a rich and elegant style. The production process aims to highlight its pronounced aromatic complexity through careful vinification in small new oak barrels. The result is a glass with a rich structure that delivers a precise and harmonious profile.
Where it comes from
This wine belongs to the Ermitage denomination, rooted in a historic terroir cultivated for centuries and renowned for its strong identity. The grapes are sourced from vineyards tended with dedication, from daily work among the rows to meticulous decisions in the winery. Careful selection of plots and the advanced age of the vines provide a concentrated raw material that forms the foundation for the wine’s roundness and harmonious taste.
How it is produced
The Marsanne and Roussanne grapes are harvested at full maturity and undergo oak barrel fermentation. The entire fermentation process takes place in small new oak barrels and is accompanied by complete malolactic fermentation. This is followed by a thirty-month aging period, a technical choice that consolidates the wine’s consistency and depth, while preserving clear varietal definition.
Tasting notes
In the glass, it presents a clear and brilliant straw yellow color. The nose offers distinct aromas of white flowers, hawthorn, and acacia blossoms, enriched by hints of acacia honey and toasted notes that broaden its aromatic range. On the palate, it is round and enveloping, supported by juicy fruit and a well-balanced tension between delicacy and intensity. The finish reveals a distinct sense of place and a lingering persistence.
Food pairings
The characteristics of this wine call for pairing with flavorful dishes that can match its fullness. It naturally pairs with rich preparations like lobster Thermidor, creating a logical link between the pronounced flavors of the dish and the wine’s toasted notes. It also goes beautifully with veal fillet accompanied by a morel mushroom sauce, where the tenderness of the meat harmonizes perfectly with the wine’s roundness.
When to serve it
This label is ideal for special occasions and refined dinners thanks to its remarkable substance. The winemaking approach, based on the use of new oak and extended aging, allows the wine to benefit from proper aeration before serving. It maintains its delicate balance over time, ensuring a satisfying tasting experience even after further bottle aging.
