Description
The Mezcal Joven Donaji of the Tradición Chagoya company was born in La Pira, in Miahuatlán de Porfirio Díaz in, in the heart of Oaxaca, Mexico. It is made entirely with the piña - the heart - of the Espadin agave, cooked in a conical stone oven buried and crushed in the traditional Tahona mill operated by a horse. Fermentation follows in wooden vats and double artisan distillation in copper still.
It appears to be transparent and crystalline. The nose opens with fresh citrus scents, enriched with pleasant vegetal hints in the finish. On the palate it is soft and warm, with notes of green mint, mint and cooked agave.
This distillate is particularly suitable as a base for the preparation of cocktails.
