Description
The Chardonnay Ampelio from Fontanafredda is an elegant and straightforward white wine, the result of attentive and respectful viticulture in the heart of the Langhe region, within the vineyards of Castino, in the area known as Vigneti Monsignore. The terroir, of marine origin, rich in limestone, clay, and sand, and the particular microclimate with significant temperature variations, allow the production of a wine of great expressiveness and freshness, strongly influenced by the presence of the Marin wind.
After manual harvesting, the whole grapes undergo soft pressing. The must decants cold for 24 hours, after which spontaneous fermentation with indigenous yeasts occurs. Midway through fermentation, around 70% of the wine is transferred to French oak barrels, where it continues aging until spring, with periodic bâtonnage. The remaining 30% ages in steel to preserve freshness and floral aromas. The two components are then combined before summer bottling.
On the nose, it reveals an intense and refined profile, with fresh fruity notes, floral aromas, and a delicate smoky hint. The taste is harmonious, savory, with good persistence and a balanced structure. The mineral component, enhanced by the terroir, combines with a contained alcohol level, offering a wine capable of positively evolving over time thanks to its potential for bottle aging.
It pairs perfectly with soft cheeses, chicken-based dishes such as Caesar Salad, and fish main courses like red prawns or cod fillet.
