Description
The Nebbiolo Red Label is produced by Ca’ del Baio from a selection of grapes sourced from different vineyards. It is a fresh and immediate wine, which best expresses the typical characteristics of Nebbiolo grown in younger vineyards, offering great drinkability and an authentic character linked to local tradition.
The winemaking process includes a short maceration followed by alcoholic fermentation, both conducted in stainless steel tanks at controlled temperatures. The wine is then left to rest in the same containers for about 4 months before bottling, maintaining its original freshness and fragrance.
In the glass, it presents a garnet red color crossed with ruby hues. The aroma is fragrant and reminiscent of dried flowers, with a distinct scent of geranium and light fruity hints recalling raspberry. On the palate, it is dry, warm, and smooth, with a slight tannicity that completes its structure, offering a harmonious and flowing sip.
It is particularly suitable for pairing with fresh cured meats, lightly aged cheeses, pasta with ragù, and simple red meats such as hamburgers or beef carpaccio.
