Costa Arente's Vino Spumante Rosé Brut Molinara is a sparkling rosé wine made from Molinara grapes, a typical varietal of Valpolicella. Vinification involves pressing whole grapes, with fermentation at low temperature in stainless steel to preserve fresh aromas and a clean aromatic profile. The secondary fermentation takes place in a pressurized tank using the Martinotti method, with time on the lees contributing a delicate note reminiscent of bread crust. The result is a well-structured rosé, with a decisive and versatile sip, suitable both at the table and as an aperitif.
Where does it come from
The grapes come from Valpolicella. In this area, Molinara, often found in Amarone and Valpolicella Ripasso blends, is vinified on its own, offering a fresh and distinctive profile.
How is it produced
The process starts by pressing whole grapes and adding dry ice to bring the temperature to 7-8°C, limiting oxidation. After static clarification, the must ferments in stainless steel at 12-13°C to preserve fragrance and primary aromas. The second fermentation takes place in a pressurized tank via the Martinotti method, followed by ageing on the lees for about five months. A further rest in bottle for at least two months completes the process.
Tasting notes
It appears an antique pink in the glass. On the nose, notes of peach and pomegranate emerge, with a hint of bread crust due to time on the lees. On the palate, the attack is dry, with freshness and a pleasant bubble that supports the structure. The sip is straightforward and persistent, with good drinkability and a clean finish.
What to pair it with
Ideal as an aperitif for those seeking freshness and precision, it pairs well with raw fish and vegetarian risottos. Its acidity cleanses the palate, and the bubbles lighten dishes based on spring vegetables.
