Description

Monti Lessini Le Macine by Vitevis - Colli Vicentini is a Pas Dosé Metodo Classico sparkling wine made exclusively from Durella grapes, an ancient autochthonous vine of the Lessinia. The vineyards are mainly located on high hills with southern exposure and on volcanic soils, which give the wine minerality and freshness. This sparkling wine represents an authentic and refined expression of the Veneto region.

The winemaking follows the Metodo Classico, with a first fermentation in autoclave followed by the second fermentation in the bottle. The wine rests on the lees for at least 36 months, after which manual remuage and disgorgement take place. This long aging allows for the development of aromatic complexity and an elegant structure, perfectly balanced with the natural acidity of Durella.

Visually, it presents a straw-yellow color with golden reflections and a fine, persistent perlage. The bouquet is wide, with hints of honey, acacia flowers, and hawthorn, accompanied by notes of toasted bread and flint. On the palate, it is dry, harmonious, with good structure and well-balanced acidity, enhancing its decisive and refined personality.

It pairs well with fish dishes, cod, white meats, and medium-aged cheeses.
