Description

Correggiolo Extra Virgin Olive Oil obtained from an ancient Tuscan variety, one of the most widespread in the region, grown on the Castelnuovo Berardenga estate in the heart of Chianti Classico. The plant, vigorous and with a spreading habit, produces elongated ellipsoid-shaped fruits that ripen late and gradually, an authentic expression of the area's olive-growing tradition.

The olives are hand-picked at the beginning of veraison, when the polyphenol content is at its highest, and processed separately by cultivar. After pitting, extraction is carried out exclusively from the pulp within a few hours of harvesting, followed by light filtration and preservation in steel tanks under inert gas pressure to maintain integrity and freshness, then bottled in dark glass.

It is bright green in color and stands out for its great intensity and aromatic power, with notes of fresh grass, arugula, and artichoke. On the palate, it is complex and harmonious, with spicy notes of black pepper and artichoke; bitterness and pungency are at a medium-high level, lending structure, character, and persistence.

Ideal raw on dishes of Mediterranean cuisine, salads, legumes, cheese, meat, and fish, it expresses its qualities at best when stored away from light and heat sources at a constant temperature.
