Description
The Olio Extra Vergine di Oliva Chianti Classico is produced by Rocca di Montegrossi in Gaiole in Chianti, obtained from organically grown olives on the hills of Chianti, an authentic expression of the territory and local olive oil tradition.
The Correggiolo and Moraiolo olives are harvested by hand with the aid of shakers before full ripeness and pressed on the same day using a modern disk system under nitrogen, with cold processing in stainless steel and subsequent extraction by centrifuge; the oil is then filtered by natural gravity, without the use of pumps, to preserve its quality and integrity.
It shows a bright green color and an intense, fruity aromatic profile, characterized by fresh and fragrant notes, a pleasant spiciness, and vegetal hints of artichoke and freshly cut grass, accompanied by delicate sweet nuances of apple.
Ideal raw on seafood salads, raw or grilled vegetables, meat-based first courses, grilled white or red meats, and fish baked in foil.
