Description

Extra Virgin Olive Oil Moraiolo obtained from a variety widely grown in Tuscany and Chianti, cultivated in the estate of Castelnuovo Berardenga. The plant has a compact habit and low vigor, with medium fruiting and medium-early ripening; the olives, round in shape and with a rather large stone, fully express the characteristic nature of the territory.

The olives are hand-picked at the beginning of veraison, when their polyphenol content is at its highest, and processed separately by cultivar. After the pit is removed, extraction takes place exclusively from the pulp within a few hours from harvest, followed by light filtration and storage in stainless steel tanks under inert gas pressure to preserve integrity and freshness, with subsequent bottling in dark glass.

A complex and structured oil, with a color ranging from pale green to deep green, it stands out on the nose for notes of artichoke, thistle, wild herbs, and fresh olive. On the palate, notes of thistle and artichoke return, with a pronounced bitter and spicy tendency that defines its personality, depth, and persistence.

Ideal on soups and minestrone or on red and grilled meats, it is recommended to store it away from light and heat sources at a constant temperature to maintain its characteristics intact.
