Description

Pendolino Extra Virgin Olive Oil obtained from a variety very common in Central Italy, traditionally also used as a pollinator thanks to its abundant pollen production. The tree is characterized by long, drooping branches, good resistance to cold, and early ripening, expressing an elegant and distinctive profile within the Tuscan olive-growing context.

The olives are handpicked at the beginning of veraison, at the peak of polyphenol concentration, and processed separately by cultivar. After removing the stone, the extraction is carried out exclusively from the pulp within a few hours of harvesting, followed by light filtration and storage in steel tanks under inert gas pressure to preserve freshness and stability, with final bottling in dark glass.

With a particularly bright straw yellow color, it stands out for its very delicate and refined style. On the nose, notes of bitter almond, hazelnut, and fresh almond emerge; on the palate, the entry is sweet and delicate, followed by a pleasant spicy note reminiscent of green pepper and curry, giving balance and liveliness.

Ideal paired with moderately delicate dishes with a tendency towards sweetness, such as boiled fish, white bread, and pasta with light sauces, it is recommended to store it away from light and heat sources at a constant temperature to best preserve its qualities.
