Olio Extravergine di Oliva L'Olionovo 2018 Castellare di Castellina

Oil from the Castellare di Castellina estate which aims to enhance the freshness of the oil, Olionovo is the ancient peasant expression with which we refer to freshly pressed oil. It consists of olives of the Frantoio, Pendolino, Ascolane and Moraiolo cultivars, whose pressing is strictly cold, with stone grinding.

Intense and bright emerald green color, it has a medium intense fruity aroma. On the palate it recalls the typical hints of artichoke of Tuscan oil, to which are added the characteristic spicy notes, a sign of richness in polyphenols.

Excellent for seasoning a starter of beans, as well as fresh vegetables or a fish carpaccio.
