The Giorgi T.O.P. Zero is a Metodo Classico Nature sparkling wine produced in the Oltrepò Pavese, a result of the experience and passion of the Giorgi winery. Made from a selected cuvée of the best vintages, it represents one of the highest expressions of sparkling wines without sugar dosage, perfect for those seeking purity and elegance in every glass.
The winemaking process involves hand-picking the grapes in crates around the end of August, followed by fermentation at controlled temperatures in stainless steel tanks, with a small part of the must fermented in French oak barrels. After the spring bottling, the wine matures for at least 80 months on the lees, and at the time of disgorging, it is topped up exclusively with the same wine.
Visually, it presents a straw yellow color with golden reflections and a fine, persistent perlage. On the nose, it offers a complex bouquet with elegant notes of white flowers and vanilla, while on the palate it is savory, dry, with great structure and well-balanced.
It pairs perfectly with fish-based dishes, enhancing their flavors with its freshness and verticality.
