Description
The Martín Códax OW is an orange wine made from Albariño grapes, vinified using ancestral techniques inspired by the ancient traditions of the Caucasus. The manual and primitive approach used in the winery allows for a wine with a strong identity, born to express an authentic and original soul. The long maceration with the skins gives the wine structure, complexity, and distinctive aromatic evolution.
Fermentation takes place in stainless steel, followed by a seven-month aging period in concrete tanks in contact with the skins. This winemaking technique allows for maintaining the fruit's freshness while enriching it with depth and an unusual tannic texture for a white wine, maximizing the varietal characteristics of Albariño.
It presents an amber color with iodized reflections in the glass. The nose offers medium intensity aromas dominated by notes of candied orange, citrus marmalade, yellow flowers, and herbaceous nuances. On the palate, it is structured, tannic, and broad, with a full and round sip that evokes the depth of a red wine while maintaining freshness and precision.
It pairs perfectly with white meats, red-fleshed fish, aged cheeses, and marinated dishes.
