Pantelleria DOP Shalai Vinisola
Description
Vinisola's Shalai is born in vineyards located in the splendid stage of the island of Pantelleria.
It is produced with pure Zibibbo grapes, carefully picked and selected by hand between August and September. Fermentation takes place, with maceration, in steel, at a controlled temperature of 20 ° C for 24-72 hours. Then the refermentation takes place in an autoclave for 6 months, according to the Charmat method.
Vinisola's Shalai is characterized by a straw yellow color with intense green reflections. The nose opens with elegant aromas of Mediterranean flowers and citrus, enriched with hints of white peach and sage. On the palate it is sweet and aromatic, with a full and persistent aftertaste and a pleasant finish of grilled bread.
Perfect to accompany raw fish and cruditès appetizers, it is ideal with oysters and desserts.
