Description
The Passito di Pantelleria Bugeber di Rallo rises in the locality of the same name, located in the northern part of the volcanic island of Pantelleria.
It is obtained exclusively from Zibibbo, or Moscato d'Alessandria grapes, harvested only by hand in boxes in September and left to dry for a long time. After a soft pressing of the bunches, the must ferments in stainless steel at a controlled temperature of 15-16 ° C for 20 days. It follows aging in steel for 8 months and for further 2 months in bottle before being released on the market.
It has an amber yellow color. The nose can be perceived intense and persistent citrus aromas that make room for hints of ripe fruit, including the date and apricot, with hints of honey. In the mouth it is full, round and elegant, with a pleasant sour note at the end of the mouth.
Ideal in combination with all fruit-based desserts, it goes very well with dry pastries and aged cheeses.
