Pauillac AOC 2007 Château Latour
Description
Château Latour was born in organic and biodynamic vineyards, located in the heart of the AOC Pauillac, in the famous Bordeaux wine region. It is one of the premier cru included in the Official Classification of Bordeaux Wines of 1855. This classification system was wanted by the Emperor Napoleon III on the occasion of the Universal Exhibition of Paris, in order to make the best Bordeaux wines more recognizable even outside of the borders of France. The wines were ordered from the first to the fifth cru based on the reputation of the cellar and the price, which at the time was a factor directly related to quality. Together with the other premier cru Grand Classé it is considered a legend that made the history of wine.
It is mainly produced with Cabernet Sauvignon grapes and with Merlot, Cabernet Franc and Petit Verdot grapes, harvested and selected entirely by hand. Fermentation takes place in stainless steel tanks filled exclusively by gravity, at controlled temperature. After malolactic fermentation, the wine ages for 24 months in new French oak barrels from Nievre and Allier.
Château Latour has a ruby red color tending towards garnet. The nose opens with an elegant and intense bouquet, with hints of cassis and truffle, enriched with earthy and tobacco notes. On the palate it is a regal wine, full-bodied, powerful and tannic.
Perfect to accompany grilled red meats and noble poultry, it is ideal in combination with mushrooms and Asian dishes.
