Description
The Petit Chablis from Labouré-Roi is produced in the hills surrounding the Serein Valley, in the northern part of Burgundy. This appellation features Kimmeridgian soils, with strata of brown and hard limestone, sometimes sandy, located between 230 and 280 meters above sea level. The vineyards are located on the hilltops or at the beginning of the plateau, conditions that guarantee freshness, liveliness, and typical minerality to the wines from this area.
The Chardonnay grapes are pressed right after harvesting, then the must is left to settle before the start of alcoholic fermentation, conducted with selected yeasts in stainless steel vats at a controlled temperature of 18°C to preserve the fruity component. Malolactic fermentation begins ten days later and ends in late November. The wine matures on partial lees for 4-5 months, developing roundness and complexity without losing freshness.
Visually, it is a pale golden yellow, clear and bright. The aroma reveals elegant floral notes of acacia, citrus, and a mineral and fruity base. On the palate, it is lively, light, and well-balanced, with a fresh attack followed by a pleasant roundness. Its full structure blends with the freshness, offering an enveloping gustatory persistence.
It pairs perfectly with cured meats, oysters, lamb sweetbread vol-au-vent, grilled chicken thighs, or Gruyère cheese.
