Description

What kind of wine is it?

Pommard by Parent is a still red wine from Burgundy, made entirely from Pinot Noir grapes. It showcases a classic and structured expression characterized by a flavor profile focused on ripe fruit and a delicate tannic texture. This wine reflects the hallmarks of its native terroir, combining traditional winemaking techniques with carefully managed oak aging.

Where does it come from?

This wine originates in the village of Pommard, a renowned area in Burgundy celebrated for its characterful red wines. The vines here are cultivated on deep clay-limestone soils, a key element that imparts precision and stability. The unique pedoclimatic conditions of the area provide the ideal environment to enhance the grape variety, making this territory a benchmark for the entire wine region.

How is it made?

Hand-harvesting involves careful bunch selection to ensure the highest quality grapes. The process begins with a pre-fermentation cold maceration lasting three to five days, followed by controlled-temperature fermentation extending from sixteen to eighteen days. The wine is then aged for fourteen months in partially new oak barrels, a step fostering integration between the structural and aromatic components.

Tasting notes

In the glass, it displays an intense and deep ruby red color. The bouquet opens with sharp red fruit aromas complemented by delicate spicy notes and subtle floral hints. On the palate, it expresses a balanced style emphasizing a solid structure supported by ripe, well-integrated tannins. The taste progression is consistent and linear, leading to a clean and well-defined finish.

Food pairings

The structural character of this red makes it the perfect companion for red meat main courses, especially when grilled or prepared in rich recipes. It also pairs excellently with game birds, thanks to the balance between the fruity and spicy notes. The softness of the tannins and the wine's aromatic profile support intense dish flavors without overpowering them, creating a harmonious pairing.

When to serve

Ideal for convivial moments at the table, this wine is especially appreciated when menus focus on bold flavors. Its solid structure and time in wood allow it to evolve well with aging, making it suitable for cellar aging too. Poured during a formal dinner or an evening among enthusiasts, it provides a clear and faithful expression of Pinot Noir's potential, ensuring a balanced and consistent tasting experience.
