Description

What kind of wine is it

Pouilly-Fuissé “Clos” Sur la Roche by Saumaize-Michelin is a dry white wine made from Chardonnay grapes in Mâconnais, Burgundy. This wine ferments in French oak barrels and completes malolactic fermentation, offering a fresh and well-structured profile. The aging on fine lees and the absence of filtration support a clean aromatic character, highlighted by a pronounced minerality and a remarkable ability to evolve over time.

Where does it come from

The Chardonnay comes from Vergisson, in the heart of the Pouilly-Fuissé appellation, within the Mâconnais region. The grapes are harvested from a 1.65-hectare vineyard located on the rear slope of Roche de Vergisson, a sunny area that favors early ripening. The soil and the specific microclimate of this site, combined with rigorous biodynamic management that excludes chemicals and mechanical operations, help forge an energetic style with a profound sense of place.

How is it made

Harvesting is followed by vinification with technical precision. Fermentation takes place in French oak barrels, followed by full malolactic fermentation. The wine matures for twelve months on fine lees and undergoes periodic bâtonnage to enhance its consistency and integration. Bottling occurs without filtration and strictly follows the lunar calendar to best preserve the wine’s integrity.

Tasting notes

It appears a bright yellow, consistent with its time spent in wood and on the lees. The nose reveals ripe fruit aromas complemented by an intense, layered minerality. On the palate, it's broad and sturdy, supported by a vivid freshness that brings energy and balance. The long finish reflects a solid framework that favors progressive evolution in the bottle.

Food pairings

This wine pairs naturally with fish dishes, where its freshness and firm structure balance bold flavors, and it’s also well-suited to soft cheeses. In keeping with Burgundy tradition, it goes harmoniously with escargots—its mineral component stands up well to butter—and it beautifully accompanies fish served with rich sauces to enhance each structured, satisfying sip.

When to serve

This bottle is perfect for lunches or dinners where you want a characterful dry white that combines breadth and gustatory focus in perfect balance. Its notable structure makes it suitable both for immediate enjoyment and for extended aging in the cellar. On a gourmet menu, it shows outstanding versatility, accompanying the meal from starter to main course while always maintaining excellent tension on the palate.
