Description
The Prosecco Col Fondo of the De Stefani company is produced with Glera grapes from the areas between Conegliano and Valdobbiadene.
After arriving in the cellar, the grapes are destemmed before soft pressing. Fermentation is carried out at a controlled temperature to then allow the wine to mature for a few months on its own yeasts with frequent batonnage. After the sparkling process, the base wine naturally referments in the bottle in contact with the yeasts present.
Pale straw yellow in color, it has citrus notes and very pleasant hints of bread crust and yeast. On the palate it is crunchy, medium-bodied and of good persistence.
Perfect as an aperitif, it can be drunk throughout a meal or with shellfish and sushi.
