Description
Zensa Primitivo is a red wine originating from Salento.
The grapes are hand-harvested at the end of August and then destemmed. Fermentation takes place with whole berries for 8-10 days in temperature-controlled stainless steel tanks. This is followed by malolactic fermentation induced by lactic acid bacteria. 30% of the wine ages for 12 months in French and American oak barriques.
Intense ruby red in color, the nose offers complex aromas, starting with cherry, dried small fruits, and toasted almond. The palate is soft and silky, with a spicy, persistent finish.
Perfect with rich baked pasta dishes and braised red meats.
