How it is produced

The grapes are hand-harvested with careful bunch selection to ensure integrity and cleanliness. Spontaneous fermentation takes place in steel with no wood, so the varietal and mineral characters remain clear. After fermentation, the wine is racked off the coarse lees and matures for 24 months on the fine lees.
