Guímaro Mundín by Guímaro is a red from Ribeira Sacra made from Mencía and native varieties such as Brancellao, Grenache and Grao Negro. Classified as viño de garda, fermentation with a portion of stems and ageing for 18 months in oval foudre suggest a well-defined tannic texture and solid structure, a sensory interpretation resulting from the winemaking techniques. The aromatic profile combines freshness and depth, offering a wine suitable for bottle ageing.

Where it comes from

The grapes for Guímaro Mundín come from vineyards located in Santa María de Nogueira, near the Miño river in Ribeira Sacra. The granite and deep soils, together with the oceanic climate tempered by the river, encourage the development of complex aromas and maintain good acidity. The area is marked by a long history connected to wine production.

How it is produced

Manual harvesting in crates ensures the selection of the best grapes. Fermentation takes place with a share of stems (40%) at controlled temperature, followed by a calibrated maceration to extract ripe tannins. Ageing for 18 months takes place in 3,000-liter oval foudre, preserving the mineral characteristics and the identity of the terroir.

Tasting notes

Guímaro Mundín shows an intense garnet color with ruby reflections. The nose reveals ripe red fruit aromas such as cherry and plum, accompanied by earthy notes, black pepper, and slight spicy nuances. On the palate it offers a compact structure, smooth tannins and lively acidity, with a persistent finish recalling graphite and forest floor. The balance between freshness and depth suggests a good ageing potential.

Food pairing

This wine pairs well with roast or grilled red meats, stews, and game. From Galician cuisine, it accompanies dishes such as pulpo a la gallega and empanada gallega, while among cheeses it matches well with mature tetilla. The combination of acidity and structure is also suited to wild boar ragù and braised preparations, enhancing intense flavours and rich dishes.

When to serve it

Guímaro Mundín can be enjoyed young, but reaches its best expression after at least two years of bottle ageing. The minerality of the granite soils and its structure support an ageing potential of 6-8 years. The best time to consume it is between the third and fifth year, when tannins, acidity, and earthy notes reach their balance.
