Description
Celeste Crianza is a red wine from the Ribera del Duero denomination, made from Tinto Fino (Tempranillo) grapes grown between 790 and 900 metres above sea level. It is produced on the Pago del Cielo estate, owned by the Torres family, located near Fompedraza, in an area where the sky and the vine seem to touch, giving the wine a unique and evocative character. The area stands out for its morphology of plateaus and steep valleys, and for the richness of its calcareous and clayey soils.
The vinification involves maceration on the skins for 15-20 days, followed by alcoholic fermentation in stainless steel with temperature control between 25°C and 30°C. Malolactic fermentation occurs partially in new barrels, accompanied by aging on the lees for 2 months. The wine then ages for 12 months in oak barrels, 55% of which are French and 45% American, with 17% new wood, and continues to age in the bottle for at least another 12 months before being released for sale.
It has an intense dark cherry red color. On the nose it offers a rich and refined bouquet with notes of blueberry jam, cocoa, dried plum and sweet spices such as vanilla and pink pepper. On the palate it is silky and harmonious, with soft tannins and a delicate structure, more elegant than powerful.
Thanks to its softness and fruity notes, it goes perfectly with grilled meats, chorizo and mature cheeses, and is excellent with roast lamb.
