Description
El Picón is an iconic red wine from Pago de los Capellanes, originating from one of the oldest plots of the estate, located just a few steps from the winery. This vineyard, which gives the wine its name, is situated on a clay-silty soil with gravel on the surface, characterized by extremely low fertility and very limited yield, producing grapes of exceptional quality and concentration.
The Tinto Fino grapes are hand-picked in boxes and chilled for 24 hours before processing. After a six-day pre-fermentation cold maceration, fermentation occurs spontaneously in small French oak vats at a controlled temperature. Malolactic fermentation takes place in barrels, with periodic bâtonnage on the fine lees. Aging continues for 27 months in extra-fine grain French oak barrels with wood aged for 60 months. The wine is bottled without fining or stabilization.
Visually, it presents a deep and captivating ruby red color. The nose reveals distinct and intense balsamic aromas, accompanied by red and black wild berry fruits such as cherry, currant, cassis, and blackberry. These are followed by elegant spicy nuances, including cinnamon, cloves, and cedar wood, well integrated thanks to the use of top-quality French oak. On the palate, it is vibrant, fresh, velvety, and structured, with lively and smooth tannins, great intensity, and a long, elegant, and seductive finish.
It pairs with refined dishes like beef tenderloin, noble game, herb-crusted lamb rack, or aged blue cheeses.
