El Picón from Pago de Los Capellanes is a red wine made exclusively from Tinto Fino grapes in the Ribera del Duero region. Where it comes from
The El Picón vineyard is located on the Pago de Los Capellanes estate. The clay-loam soil with surface gravel yields very low harvests and favors the concentration of aromas in the grapes. The area boasts a long winemaking tradition and ideal conditions for Tinto Fino, which impart character and depth to the wine.
How it is produced
The Tinto Fino grapes are hand-harvested and chilled for 24 hours before processing. After a six-day cold maceration, spontaneous fermentation takes place in small French oak vats at controlled temperatures. Malolactic fermentation occurs in barriques, with periodic bâtonnage on fine lees to enhance complexity and softness. Aging continues for 27 months in extra-fine grained French oak barrels, with wood seasoned for 60 months. The wine is bottled without fining or stabilizing, preserving integrity and structure.
Tasting notes
El Picón displays a brilliant, intense ruby red color. On the nose, pronounced balsamic aromas emerge, combined with red and black berries such as cherry and blackberry, enriched by spicy notes of cinnamon, clove, and cedarwood. On the palate it is vibrant and fresh, with polished tannins and a full-bodied structure. The balance between acidity and body leads to a long, persistent finish, with fruity and spicy returning notes that highlight the wine’s complexity.

This wine pairs with premium red meats, such as grilled beef fillet, herb-crusted rack of lamb, and noble game. It is also ideal with long-aged blue cheeses.
