Description

This red wine is an authentic expression of the territory of Quintana del Pidio, made primarily from Tinto Fino grapes with a small addition of Albillo Mayor. The very old vines, cultivated using traditional methods, grow in high-altitude sandy and clay soils, giving the wine a clear and territorial character. The partial use of whole bunches and a respectful approach in the cellar enhance the varietal and soil identity.

Fermentation occurs with a portion of whole bunches, followed by aging in barrels for 16 months. This process preserves the fruit's integrity and enriches the profile with spicy and balsamic notes, also due to the extended aging in wood. The structure and persistence derive from the balance between the sandy and clay components of the soil.

On the nose, mature aromas of blackberry, cherry, blueberry, and licorice emerge, accompanied by mentholated nuances and black pepper. On the palate, it presents a fresh entry and an enveloping progression, with a pleasant texture and a long, complex finish thanks to the good acidity and altitude of the vineyards.

Perfect with grilled red meats or spicy traditional stews.
