Description

El Nogal is a red wine of singular elegance produced by Pago de los Capellanes, from a unique plot situated in the municipality of Mambrilla de Castrejón, near the winery. The vineyards stretch across a height of 850 meters above sea level, facing the Duero valley, in a particular microclimate dominated by sandy-clay and gravelly soils. The location, combined with the low fertility of the soil, helps to enhance the natural talent of the place.

The Tinto Fino grapes are harvested by hand in boxes and refrigerated for 24 hours before vinification. After a six-day cold maceration, spontaneous fermentation occurs in French oak vats at controlled temperature, followed by spontaneous malolactic fermentation in barrels, with periodic bâtonnage. The wine is aged for 27 months in French oak barrels, with extra-fine grain and medium toast. The wine is bottled without fining or stabilization.

In appearance, it shows an intense ruby red color. The bouquet is rich and complex, with hints of ripe red fruits such as cassis and cherry, accompanied by toasted and spicy notes of cloves and cinnamon. Herbal memories also emerge, including peppermint. On the palate it is fresh, balanced, flavorful and silky, with lively and smooth tannins, a well-defined mid-palate and a long and persistent finish, rich in complex aromas.

Ideal as a pairing with structured dishes like braised meats, roasted lamb, stewed game, and aged cheeses with intense flavors.
