Description
The Celeste Verdejo is a white wine produced in the Rueda designation, in Castile and León, using exclusively Verdejo grapes. It originates from Pago del Cielo, an estate owned by Familia Torres, located near Villafranca del Duero, where the vineyards along the Duero River offer ideal conditions to develop freshness and aromatic intensity. This wine represents the elegant and luminous soul of the Verdejo, highlighting the connection between the terroir and the indigenous variety.
The winemaking process involves a delicate cold maceration on the skins for about three hours, followed by alcoholic fermentation in stainless steel at a controlled temperature of 14°C for 15 days. After fermentation, the wine ages for two months on the lees, giving greater complexity and structure. The entire process is aimed at preserving the varietal purity and freshness of the fruit.
In appearance, it shows a bright pale gold color. On the nose, it releases intense and fragrant aromas of fennel, pineapple, and chirimoya. On the palate, it is silky, lively, and well-balanced, with a pronounced fruity acidity that makes it particularly elegant and persistent.
Excellent as an aperitif, it pairs with great balance with shellfish, fried or grilled fish, and green salads with citrus dressings.
