Description
This Rully from Maison Ropiteau Frères comes from the Côte Chalonnaise, in the heart of Burgundy, in a hilly area situated between 230 and 300 meters above sea level. The wine is made exclusively from Chardonnay grapes grown on clay-limestone soils typical of the region.
The winemaking process begins with a pneumatic pressing of the whole grapes for two hours, followed by a static decantation for 24 hours. Alcoholic fermentation takes place in French oak barrels, about 15% of which are new, and during aging, weekly bâtonnage is performed to enhance the wine's aromatic complexity.
The wine shows a golden color with green highlights, which tends to intensify with aging. On the nose, it releases intense aromas of flowers such as acacia, hawthorn, and honeysuckle, with a delicate touch of elderflower. Notes of violet, lemon, white peach, and flint can also be distinguished. Over time, hints of honey, quince, and dried fruit emerge. On the palate, it is lively and well-balanced, rich in fruit, with a full structure and a long persistence that recalls the freshness and elegance of marble.
It pairs perfectly with fried river fish, warm shellfish, aged cheeses like Comté, and noble poultry in creamy sauce.
