Rully Les Maizières by Marthe Henry is a dry white from the Côte Chalonnaise in Burgundy, made from Chardonnay grapes from the "Les Maizières" climat. The wine displays a fresh and elegant profile, with a balanced structure and a clear minerality. Fermentation with native yeasts and prolonged aging in oak provide depth and precision, preserving drinkability and regional typicity. Where does it come from
The grapes come from Rully in the Côte Chalonnaise, the southern part of Burgundy known for taut and consistent white wines. The "Les Maizières" climat lies on gently sloping hills with clay-limestone soils that ensure good drainage and water retention. The continental climate with warm summers and cool nights favors acidity and aromatic clarity, while the saline texture and long finish reflect the best-exposed parcels.
How is it made
Harvesting aims to preserve the freshness of the Chardonnay. After gentle pressing, fermentation occurs spontaneously with native yeasts. The winemaking follows a low-intervention approach, with careful control of oxygen and temperature to safeguard aromatic precision. Aging takes place in oak barrels for at least 18 months, often on the fine lees, without aggressive clarification or filtration, thus retaining substance and the fingerprint of the terroir.
Tasting notes
In the glass, the color is straw yellow with golden highlights. The nose reveals white flowers, citrus, and stone fruit, with subtle hints of hazelnut and sweet spices from the oak. On the palate, the attack is taut, the structure remains medium, supported by vivid acidity and a marked mineral streak. The finish is long, dry, and elegant, with notes of fresh fruit and a persistent saline touch.
Food pairing
Chardonnay pairs well with fish dishes, particularly shellfish, baked fish, and preparations with butter or light sauces, where freshness and minerality cleanse the palate. It also works well with soft, bloomy-rind cheeses, enhancing creaminess without being heavy. Excellent with Burgundian gougères, pike quenelles in Nantua sauce, seafood risotto, herb-crusted trout, delicately roasted poultry, and creamy vegetable dishes.
When to serve it
Rully Les Maizières is ideal when seeking precision and versatility, from a gourmet aperitif to a full meal, especially with seafood and creamy dishes. Best served at 10–12 °C in a large white wine glass to encourage aromatic development. If young, a few minutes of aeration in the glass will enhance its balance. Thanks to oak aging and vibrant acidity, the wine can evolve in the bottle, developing more complex notes of dried fruit and spices, or offer immediate freshness.
