Description
The Saint-Romain Blanc from Maison Ropiteau Frères originates in Côte de Beaune, one of the oldest areas in Burgundy, where the Celts and Gallo-Romans once cultivated vines. The vineyards, located at an altitude between 280 and 400 meters, stretch over gentle slopes facing south and south-east. The soils are characterized by a combination of marl, limestone, and clay, ideal conditions for growing Chardonnay, which produces this elegant and mineral wine.
The grapes are hand-picked and selected upon arrival at the winery, where they are gently pressed with a pneumatic press to preserve the integrity of the fruit. Fermentation and aging occur in French oak barrels, 20% of which are new. The wine remains on the lees for 14 months with periodic bâtonnage, followed by a final aging in stainless steel vats for another 2-3 months prior to bottling, to complete its development.
In appearance, it is straw yellow with golden hues. On the nose, it reveals delicate citrus aromas with light toasted notes, while on the palate, it impresses with its pronounced minerality and the finesse of flavors, enhanced by the aging in wood that provides structure and balance.
It is perfect paired with white meats and poultry in delicate sauces, veal, and cheeses like Brillat-Savarin and Cîteaux.
