Description

What kind of wine is it

Saint-Romain La Combe Bazin by Rougeot is a white wine produced in Burgundy, in the Saint-Romain appellation. It stands out for its technical precision and rigor, with a well-defined structure that combines with a pronounced mineral character. Vinification and ageing in wood contribute to outlining a fresh and elegant style, designed to highlight the aromatic finesse typical of French whites from this specific geographical area. This is a bottle where gustatory depth is harmonized by remarkable overall balance.

Where does it come from

The grapes come from the La Combe Bazin parcel, located within the Saint-Romain appellation on a steep slope at 450 meters above sea level. The vineyard is made up of historic vines about eighty-five years old, a fundamental factor in obtaining low yields and greater aromatic concentration in the grape clusters. Although the area does not yet have officially classified vineyards, this plot is in the process of being recognized for the distinctive characteristics of its soil. The high elevation and soil composition promote a marked mineral quality, typical of these uplands.

How is it produced

Production begins with manual harvesting and rigorous selection of the grape clusters directly among the vines, followed by careful transport to the winery. The process continues with a slow pressing of the grapes and cold settling of the must to ensure its original clarity. Alcoholic fermentation takes place in oak barrels, 15% of which are made of new wood. Ageing then continues for eighteen months in barrels, a technical choice intended to enhance the expressive potential and structural evolution of the raw material to the fullest.

Tasting Notes

In the glass, the wine reveals a bright color that introduces a restrained and complex aromatic bouquet. On the nose, it opens with delicate aromas of white flowers, enriched by notes of ripe peach, hazelnut, and subtle buttery hints derived from its prolonged contact with wood. On the palate, the entry is decidedly vibrant, supported by pronounced freshness and a clear mineral vein that guides the entire sip. The finish is long and elegant, closing with precise and persistent returns of dried fruit.

Food Pairings

The gustatory tension and aromatic profile of this white make it an ideal partner for refined fish dishes and a wide range of seafood. Its balanced acidity supports delicate textures without ever overpowering them, thus creating a harmonious and precise tasting experience. It is also particularly suited to white meats with light sauces, where the structure provided by wood integrates with the sweetness of the dish to enhance careful preparations and high-quality ingredients.

When to serve it

This white is suitable for immediate consumption, to appreciate its clarity and youthful drive, or for extended bottle ageing, ideal for those seeking greater integration between the fruity component and the wood. Thanks to the careful production process, every sip ensures consistent progression over time, maintaining its stylistic definition for years. It is recommended for convivial occasions focused on seafood menus to provide a technically reliable pairing throughout the meal.
