Salento IGT Primitivo Pilùna 2016 Castello Monaci
Description
The Pilùna sees the light in the Salento vineyards of Castello Monaci, in Puglia.
This wine is produced entirely with Primitivo grapes, harvested manually only from sunrise to 9 in the morning for cooler temperatures. Vinification takes place at controlled temperature, with about 2 weeks of maceration and frequent pumping over. Subsequently, part of the product evolves for about 6 months in French barriques, the rest remains in steel.
It has a dark purple red color. The nose offers a broad scent of ripe red fruit, with notes of black cherry and morello cherry jam. In the mouth it is soft and balanced, with peppery and vanilla sensations which, at the end of the mouth, leave room for hints of fruit jam and licorice.
It goes perfectly with roasts, stewed meats and game. It is ideal with well-aged cheeses.
