What kind of wine is it
Santenay 1er Cru Clos Tavannes by La Pousse d’Or is a red Burgundy wine, made exclusively from Pinot Noir grapes. Classified within the renowned Santenay appellation, it delivers an elegant style and enviable structural balance. The winemaking employs native yeasts and careful aging in French oak barrels that brings complexity without overpowering the fruit. The result is a wine with a precise expression of its provenance, boasting excellent aging potential that ensures impressive evolution over the years.
Where it comes from
This red comes from the exclusive vineyard Clos de Tavannes, a five-acre plot enclosed on three sides by an old stone wall. Its excellent eastern exposure and the presence of limestone soils and marl create optimal conditions for vigorous vine growth. La Pousse d’Or manages these lands with a strong commitment to organic farming, ensuring full respect for the environment. These geographic and agronomic features lead to a defined expression, able to combine proper phenolic ripeness with great taste precision.
How it is produced
Production begins with a rigorous manual harvest, followed by destemming to ensure gentle and natural extraction. Fermentation starts spontaneously thanks to native yeasts, preserving the full quality of the raw material. The wine then matures in French oak barrels for eighteen months, with a balanced use of new wood that brings subtle and measured aromatic evolution. Bottling takes place directly, without fining or filtration, a crucial step for preserving structural richness and the integrity of the sensory profile.
Tasting notes
In the glass, it displays an intense violet color, deep and vibrant. The aromatic profile is broad and highly expressive, dominated by pronounced black berry fruit aromas intertwined with subtle and pleasant toasted notes from the oak. On the palate, it shows notable finesse and a well-ordered progression, guided by an elegantly integrated tannic structure. The tasting finishes with a rich and mature finish, fully reflecting the character and finesse of its terroir.
Food pairing
At the table, this great Burgundy red pairs beautifully with substantial first courses, where its innate elegance balances richer preparations. It finds its best expression alongside main courses of red and white meats, as well as noble cuts of game. Its strong yet graceful structure supports long cooking methods, enhancing the succulence of dishes and the aromatic complexity of sauces. Fruity notes and delicate toasty undertones meld harmoniously with traditional rustic recipes.
When to serve it
It is the right choice for accompanying convivial occasions where a wine of great depth and elegance is called for. The outstanding grape quality and meticulous cellar work allow it to be enjoyed in its youth with great satisfaction, while also sustaining a long bottle aging. As it rests in the cellar, it will develop further aromatic nuances that accentuate its innate finesse. Sharing this glass at a dinner featuring richly flavored dishes guarantees a complete tasting experience, bringing out every nuance of the meal.
