Description
The Chardonnay Riserva Baccante from Abbazia Santa Anastasia is a white wine made 100% from Chardonnay grapes cultivated according to the principles of Demeter certified biodynamic agriculture. The vineyards are located in Castelbuono, Sicily, on the Frassino Hill at 450 meters above sea level.
The winemaking process begins with fermentation in cement tanks to establish a more natural relationship with the cold. Fermentation takes place with indigenous yeasts and begins spontaneously after about 24 hours. After one-third of the alcoholic fermentation, the must is moved to white oak barrels, where fermentation continues at a constant temperature of 18°C for about 15-20 days. Maturation occurs for 3 months on the lees with weekly batonnage, followed by 12 months of aging in barrels and 6 months in the bottle.
It displays a clear, intense straw yellow color with golden highlights. On the nose, it offers intense aromas of acacia honey and chamomile, accompanied by notes of ripe fruit like pineapple and white plum, followed by hints of dried fruit and vanilla. On the palate, it is persistent and long, enveloping yet fresh at the finish.
This complex and elegant white wine pairs perfectly with first courses, mushroom risottos, white meats, and soft, young cheeses.
