What kind of wine is it

Grillo La Vista by Abbazia Santa Anastasia is a Sicilian white wine made from Grillo grapes cultivated according to the principles of organic farming. Vinification in steel with indigenous yeasts and temperature control aims to offer a crisp, fresh, and fruity profile, supported by good acidity and balanced persistence. Aging on the lees and subsequent bottle refinement complete the balance between aromatic intensity and final smoothness.

Where it comes from

It originates in Castelbuono, Sicily, from vineyards located on Collina del Frassino at 450 meters above sea level. This hilly context guides the expression of Grillo towards a defined, taut register with notable freshness and a clean aromatic character. The result is a white wine that directly expresses its territory and the Mediterranean nature of the area.

How it is produced

After harvest, the grapes are vinified with the aim of preserving aromas and acidity. Alcoholic fermentation takes place in steel tanks, with indigenous yeasts and controlled temperatures between 15 °C and 18 °C. The process is gradual and lasts about 15–20 days. Once fermentation is complete, the wine matures for 30 days on the lees and continues with two months of bottle aging before release.

Tasting notes

In the glass, it presents a clear straw yellow color. The nose reveals intense and varietal aromas of citrus fruits, with hints of pink grapefruit, lemon, mandarin, and orange, followed by tropical notes of pineapple and passion fruit. On the palate, it is fresh and persistent, with good acidity. The finish is long and smooth, with returns of medlar and nectarine peach.

Food pairings

At the table, it naturally pairs with fish, shellfish, and seafood, where the freshness supports the sapidity and maintains a smooth sip. It also pairs well with vegetable-based pastas and sides, and accompanies white meat mains without overpowering the delicacy of the dishes.
