Description
Sicily Insolia Evrò di Rallo was born in vineyards, organically managed , located in the municipality of Alcamo, in the province of Trapani.
It is produced exclusively with Insolia grapes, carefully picked and selected by hand in the first half of September. After a soft pressing, the fermentation takes place in stainless steel tanks at a controlled temperature of 15-16 ° C, for 8 days. Subsequently the wine ages for 6 months in steel and for another month in bottle before being released on the market.
The Evrò di Rallo is characterized by a straw yellow color. The nose opens with elegant citrus notes, enriched by an evident hint of apple. On the palate it is harmonious, mineral and persistent.
Excellent as an aperitif, it is perfect to accompany seafood, oysters, lobsters and caviar.
