Soave Brognoligo Cecilia Beretta is a Soave Classico white wine made from Garganega. The vinification process focuses on freshness and aromatic precision, with fermentation carried out in stainless steel at a controlled temperature and a small part that is fermented and aged in French oak barriques. The result is a wine with a savoury and well-structured profile, balancing acidity and softness, made rounder by aging on fine lees without losing clarity.
Where does it come from?
The grapes come from the classic Soave area in Veneto, where Garganega expresses finesse and persistence on the palate. The Brognoligo vineyards are located on soils of basaltic-volcanic origin with alluvial residues, a combination reflected in a distinct minerality and a savoury finish. The cultivation follows organic principles to highlight both varietal identity and the terroir’s imprint in the glass.
How is it produced?
Before harvest, the grapes remain on the vine for a light drying of 2–3 weeks to concentrate aromas and structure. After gentle pressing, fermentation takes place mainly in stainless steel with temperature control. A small portion ferments and ages in French oak barriques, introducing a subtle toasted note and greater volume, while the rest of the blend rests for three months on fine lees to add depth and roundness while retaining tension and savouriness.
Tasting notes
Pale yellow in appearance with greenish highlights. On the nose, it suggests chamomile, tropical fruit, and light toasted nuances in line with the part aged in barriques. The palate opens fresh and savoury, with a smooth progression and a well-balanced interplay of acidity and softness. The finish unfurls with a classic sweet almond aftertaste that prolongs persistence.
Food pairings
On the table, it complements fish dishes, delicate first courses and vegetable-based preparations, thanks to its freshness and savouriness that cleanse the palate without overpowering flavours.
