Description
Sauvignon Blanc Reserve from the Diemersdal winery is a complex and refined version of Sauvignon Blanc pending a longer aging than that adopted for its basic expression. It originates in the South African area of the Durbanville Valley, not far from the ocean currents that give the vineyards a fresh and healthy breeze.
The selection of the grapes takes place during the night, starting from a single plot of vineyard. Once collected, the bunches are transported to the cellar and left to macerate in contact with their skins for a period of 24 hours. Afterwards, pressing is carried out and the must obtained, previously added with yeasts, begins its alcoholic fermentation phase. It rests for 4 months in steel tanks on its fine lees and is then bottled, without previous filtration.
It is presented in a straw yellow hue, with good intensity. The olfactory profile is made up of citrus fruits and vegetal notes, among which the asparagus and the fresh cut grass stand out. In the mouth it is intense and full-bodied, well bound by a precise flavor and a closure that affirms freshness.
