Description
The nOmi by I Clivi is a Brut Nature sparkling wine made from an equal blend of Ribolla Gialla and Pinot Nero. It originates from ponca soils and is produced using a natural method, without refermentation, nor the addition of sugars or yeasts, capturing the carbon dioxide from the first alcoholic fermentation and the bubbles generated naturally from the beginning of the process.
The grapes are pressed, and spontaneous fermentation occurs in a sealed environment: when the residual sugar is around 25 g/l, the tank is closed to trap the CO₂. After two months of aging on the lees, the wine is bottled at constant pressure.
The sparkling wine retains the aromatic purity of the two grape varieties: finesse, verticality, and freshness translate into a clean profile, characterized by floral and fruity notes, with a creamy and natural bubble.
Perfect as an aperitif or paired with raw seafood, sushi, and light vegetarian dishes.
