Description
The Jackal’s Dance is a white wine produced in South Africa by the Neethlingshof winery using Sauvignon Blanc grapes grown in the Stellenbosch area, between the Bottelary Hills and Papegaaiberg Mountain. Part of the Short Story Collection line, it originates from vineyards exposed to the ocean breezes of False Bay, in a context of great biodiversity and distinct terroirs.
The grapes come from a single plot planted in 1997 on deep clay soils. Harvesting takes place in several passes in the cool morning hours to ensure quality and freshness. After fermentation in stainless steel, the wine ages on the fine lees until bottling to preserve liveliness and structure.
It presents a pale straw yellow color. The nose releases aromas of white pear, pineapple, and golden apple, accompanied by a herbal touch. On the palate, it is structured and fresh, with notes of gooseberry, pear, and passion fruit that develop with persistence.
Perfect with mushroom risottos, steamed mussels, calamari, grilled eggplants, or salads with artichokes.
