Description
The Tradition Brut from Villiera is a South African Mèthode Cap Classique produced in Stellenbosch with a blend of Chardonnay and Pinot Noir. It is the first classic method wine made by the winery since 1984, in collaboration with a French producer, and embodies Villiera's experience and quality consistency developed over time.
The grapes, hand-harvested slightly unripe, are gently whole-bunch pressed using pneumatic presses according to the champenoise method. Only the cuvée, or best part of the must, is used for the process. After blending, the wine undergoes bottle fermentation with yeast and sugar, and then it is aged on the lees for about 18 months, resulting in a complex structure and distinctive style.
On the palate, it presents with a fine and persistent bubble, offering citrus freshness supported by a lively acidity. Elegant hints of yeast and bread crust emerge, well balanced by delicate fruity notes that give the wine balance and character.
Perfect with shellfish, fish tartare, or light vegetable-based appetizers.
