Description
The Semillon by Idiom is a complex and structured white wine, made exclusively from Semillon grapes grown in the Da Capo vineyards, at Sir Lowry’s Pass in the Stellenbosch region. The vines, planted in 2001, thrive on soils of decomposed granite, Table Mountain sandstone, and Tukulu, with southwest exposure, drip irrigation, and vertical cordon training, ideal conditions for achieving healthy and ripe grapes with excellent varietal expression.
The winemaking involves a rigorous selection of bunches harvested in the early morning hours, followed by an overnight stay in refrigerated containers. After destemming, the berries are pressed and the must is clarified for three days before inoculation. Fermentation takes place entirely in barriques, followed by six months of aging in wood, which gives the wine body and depth, while preserving its original freshness.
The nose reveals delicate hints of custard cream, lime, and white spices, accompanied by musky notes and white pepper. On the palate, it is rich and enveloping, with a waxy texture and a lovely liveliness that supports its structure. Asparagus, biscuit, and fine spice nuances emerge, revealing the firm character and natural complexity of Semillon.
Perfect when paired with scallops, white meats, or dishes with creamy sauces.
