Description
The Viognier from Idiom is an elegant and versatile white wine produced in the Da Capo vineyards at Sir Lowry’s Pass, in the Stellenbosch region. Grown on decomposed granite soils, Table Mountain sandstone, and Tukulu, the vineyard benefits from a south-west exposure and a vertical trellis system with drip irrigation and constant south-eastern summer breezes.
The winemaking process involves an initial fermentation in stainless steel at a controlled temperature of 13-15 °C, followed by fermentation in French oak barrels, mostly second and third passage, to complete the fermentation process. The wine then matures in wood for nine months before being lightly filtered and bottled, maintaining its aromatic and structural components intact.
Of a light straw yellow color, this Viognier opens on the nose with initial notes of passion fruit, evolving into delicate scents of white pear and rose water. On the palate, it reveals mineral nuances, orange blossom, and nougat, with good freshness and a velvety body that make it a complex and intriguing wine, capable of offering a fascinating evolution in the glass.
Perfect to serve chilled, paired with seafood, shellfish, white meats such as veal and pork, roast chicken, or spicy Malay cuisine dishes.
