Description
The Alto Adige Pinot Grigio Sanct Valentin is an elegant white wine produced by Cantina St. Michael-Eppan. It comes from selected vineyards in Oltradige, situated between 420 and 600 meters of altitude, benefiting from an ideal microclimate due to south-east and south-west exposure and gravelly soils with good limestone content. The average age of the vines, between 15 and 32 years, contributes to the complexity and structure of the wine.
The winemaking process involves fermentation followed by malolactic fermentation and aging on the lees in barriques and tonneaux. The assembly of the different lots takes place after about a year, followed by a further aging period of at least eight months in cement tanks. This process allows the wine to develop depth and refinement, enhancing the characteristics of the grape variety.
In appearance, it has an intense straw yellow color. The nose reveals aromas of apple and pear accompanied by delicate notes of vanilla, toasted white bread, and hazelnut. On the palate, it reveals a strong character, with a creamy and full-bodied structure, supported by a pleasant acidity and toasted nuances that enrich the taste profile.
Ideal pairing with fish dishes or red meats, it pairs particularly well with a risotto with herb pesto.
