What kind of wine is it
San Michele Appiano's Sauvignon The Wine Collection is a white wine made from Sauvignon Blanc grapes from Alto Adige. It displays a fresh and elegant style, with lively acidity providing energy to the sip. Fermentation in barriques and tonneaux, followed by ageing in steel, offers balanced structure and clearly defined aromatic complexity. Its clean profile and crisp drinkability make it suitable for immediate consumption as well as for short ageing in the bottle.
Where does it come from
The grapes come from selected parcels in the Appiano Monte area. The climate, marked by significant temperature fluctuations, encourages delicate aromas and harmonious acidity. The viticultural context of Alto Adige enhances vineyard care and precise harvesting.
How is it made
After three days of cold maceration, gentle pressing takes place. Fermentation occurs in barriques and tonneaux, followed by 18 months of ageing in stainless steel tanks.
Tasting notes
Bright straw yellow with greenish highlights. The nose reveals exotic fruit, gooseberry, white peach, and elderflower. On the palate, lively acidity meets a medium body and pleasant sapidity. The finish is elegant and persistent, with a subtle hint of vanilla from the passage in wood.
Food pairings
This Sauvignon Blanc pairs with fish dishes such as seafood risotto or baked sea bass fillet. It also works well with delicate white meats, like herb-roasted chicken or grilled turkey. Among regional dishes, it is excellent with light speck dumplings, South Tyrolean smoked trout, or the typical barley soup, which highlights its freshness and minerality.
When to serve it
This wine is best enjoyed when young to express freshness and aromatic fragrance, but short bottle-ageing enhances its complexity and roundness. Serve at 10-12 °C to bring out both aroma and flavour balance.
