Pure Sylvaner grapes, Adler Sylvaner comes to life in the picturesque location of Klausen, Chiusa, in the province of Bolzano, in the magical Valle Isarco, the beating heart of South Tyrol, a traditionally highly suitable terroir for viticulture. Adler von Klausen, literally, “eagle of Chiusa,” is the symbol of the winery that also appears on the label, depicting the eagle, an animal that in symbolism represents cosmic power, absolute freedom, and thus, life. Similarly, the wine presents itself as imposing, austere, and elegant. The Sylvaner vineyards have been cultivated for over a century in Valle Isarco and are the most peculiar and characteristic amongst the grape varieties of this valley. After the processing and soft pressing of the grapes, fermentation takes place at a controlled temperature and maturation on fine lees in stainless steel tanks.
The color changes in the glass like a palette, with chromatic variations shading from greenish to pale yellow. On the nose, it’s all about fresh and fruity notes, with hints of peach, apple, and apricot. On the palate, it is dry, pleasantly aromatic, and fresh, with a harmonious body.
Perfect for accompanying appetizers and aperitifs, it is ideal paired with vegetables and fish-based dishes.
